How to Make Vegetarian Veggie Egg Casserole

  • Preheat your oven to 400°F.
  • Spread the hash browns evenly in a greased 9x13 inch baking dish. Drizzle with olive oil and sprinkle with salt. Bake for 30 minutes until crispy and golden.
  • Allow the hash browns to cool for 5 minutes. Then, reduce the oven temperature to 350°F.
  • In a bowl, whisk together room-temperature eggs and skim milk until foamy. Add diced bell pepper, yellow onion, green onion, garlic, paprika, and black pepper. Taste and adjust seasoning.
  • Sprinkle half of the cheese mixture over the hash browns. Pour the egg mixture evenly over the top.
  • Top with the remaining cheese. Bake for 30 to 35 minutes until the center is just set.
  • Let the casserole rest for 5 minutes. Garnish with sliced green onion and a sprinkle of paprika before serving.
