Instructions
Making the Oat Cups
In a medium bowl, mix together the rolled oats, honey, natural peanut butter, and vanilla extract until everything is well blended and sticky.
Lightly spray your muffin tin with nonstick cooking spray.
Evenly divide the oat mixture among the muffin cups and press down firmly.
In another bowl, melt the chocolate chips with the coconut oil in 20-second bursts until smooth.
Spoon the melted chocolate over each oat cup.
Sprinkle a light dash of sea salt on top of each chocolate layer.
Place the muffin tin in the freezer for at least 1 hour to set.
Notes
Optional: Drizzle with extra melted chocolate before serving for a decadent touch.
