Ingredients
  

Oat Cup Base

  • 2 cups Rolled oats Avoid quick oats for better texture.
  • 1 cup Natural peanut butter Choose smooth for optimal binding.
  • 1/3 cup Honey Adjust for desired sweetness.
  • 1 tsp Vanilla extract Optional but recommended.

Topping

  • 1 cup Chocolate chips Substitute with dark or dairy-free if desired.
  • 1 tbsp Coconut oil Can replace with butter if necessary.

Optional Add-ins

  • 1/2 cup Dried fruits Consider raisins or cranberries.
  • 1/2 cup Nuts or seeds Walnuts or chia seeds recommended.

Instructions
 

Making the Oat Cups

  • In a medium bowl, mix together the rolled oats, honey, natural peanut butter, and vanilla extract until everything is well blended and sticky.
  • Lightly spray your muffin tin with nonstick cooking spray.
  • Evenly divide the oat mixture among the muffin cups and press down firmly.
  • In another bowl, melt the chocolate chips with the coconut oil in 20-second bursts until smooth.
  • Spoon the melted chocolate over each oat cup.
  • Sprinkle a light dash of sea salt on top of each chocolate layer.
  • Place the muffin tin in the freezer for at least 1 hour to set.

Notes

Optional: Drizzle with extra melted chocolate before serving for a decadent touch.
