For the Cookie Batter

  • 1 cup Plain (All-Purpose) Flour Can use a gluten-free flour blend for a gluten-free version.
  • 1/2 cup Cocoa Powder Deepens chocolate flavor.
  • 1 teaspoon Baking Powder Optional based on desired texture.
  • 1/4 teaspoon Salt Use fine sea salt for better integration.
  • 200 grams Dark Chocolate, Chopped Semi-sweet chocolate may also work.
  • 1/2 cup Butter Use unsalted for better control over saltiness.
  • 2 large Eggs (room temperature) Ensure they are at room temp.
  • 1 cup Caster Sugar Granulated sugar can work but may alter texture slightly.
  • 1/4 cup Demerara Sugar Add caramel notes and slight crunch.
  • 1 teaspoon Vanilla Extract Use pure vanilla extract for the best taste.
  • 1/2 cup Dark or Milk Chocolate Chips Optional for extra texture.

How to Make Fudgy Chewy Brookies

  • Preheat your oven to 160°C (320°F) for a fan oven or 170°C (338°F) for conventional. Line a baking tray with parchment paper.
  • In a heatproof bowl set over simmering water, melt the chopped dark chocolate and butter together. Stir until well combined, then remove from heat and stir in the vanilla extract.
  • In a medium bowl, beat together the caster sugar, demerara sugar, and eggs on high speed for about 5 minutes until light, thick, and fluffy.
  • In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Fold in the chocolate chips.
  • Gently fold the melted chocolate mixture into the whipped egg mixture, then gradually fold in the dry ingredients until just combined.
  • Using a cookie scoop, drop spoonfuls of the batter onto the prepared tray. Bake for 12–14 minutes until the tops are crackly but the centers remain soft.
  • After baking, sprinkle with a touch of sea salt. Allow the brookies to cool on the tray for about 10 minutes before transferring to a wire rack.

Notes

Optional: Serve warm with a scoop of vanilla ice cream for an extra indulgent treat.
