Ingredients
  

For the Crust

  • 1 cup Graham Crackers Crushed
  • 1/2 cup Unsalted Butter Melted

For the Filling

  • 2 cups Fresh or Frozen Strawberries Washed and hulled
  • 3/4 cup Sugar Adjust to taste
  • 16 oz Cream Cheese Room temperature
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Heavy Whipping Cream Whipped

For Topping (Optional)

  • 1 cup Additional Strawberries Fresh, sliced
  • 1/2 cup Strawberry Purée Blended strawberries with a bit of sugar

Preparation Steps

  • Crush graham crackers into fine crumbs, mix with melted butter, and press into a 9-inch springform pan. Chill for 30 minutes.
  • Blend together washed and hulled strawberries with sugar until smooth. Optionally, strain through a fine sieve.
  • In a large mixing bowl, beat room temperature cream cheese until smooth, then add sugar, vanilla extract, and heavy whipping cream until fluffy.
  • Gently fold the strawberry purée into the cream cheese mixture, then pour it onto the chilled crust. Refrigerate for 4-6 hours or overnight.
  • Slice the cheesecake and top with additional strawberry purée or fresh strawberries before serving.

Notes

Chill for at least 6 hours for best results. Use fresh, ripe strawberries for the best flavor.
