Ingredients
  

  • - 1 lb 450g boneless, skinless chicken breasts or thighs
  • - 1 cup long-grain white rice
  • - 1 can 15 oz black beans, rinsed
  • - 1 cup corn canned or frozen
  • - 1 medium onion diced
  • - 1 bell pepper diced
  • - 2 tbsp olive oil
  • - 1 tsp cumin
  • - 1 tsp chili powder
  • - 1 tsp garlic powder
  • - Salt & pepper to taste
  • - Juice of 1 lime
  • - Fresh cilantro for garnish
  • - **Optional Toppings**: Avocado cheese, sour cream, jalapeños

Instructions
 

  • Dice chicken and toss with spices.
  • In skillet, heat oil and sauté chicken 5–7 minutes until cooked.
  • Add onion and bell pepper; cook 3–4 minutes.
  • Stir in rice, beans, corn. Add 1.5 cups broth or water.
  • Cover, simmer 15–20 minutes until rice is tender.
  • Fluff rice, add lime juice and toppings. Serve hot.

Notes

- Use brown rice for a whole grain twist.
- Spice it up with cayenne or jalapeños.
- Make vegetarian by swapping chicken with tofu or beans.
