- - 12 oz rigatoni pasta
- - 1 lb Italian sausage casings removed
- - 4 cups broccoli florets
- - 4 cloves garlic minced
- - ¼ tsp red pepper flakes optional
- - ½ cup reserved pasta water
- - ½ cup grated Parmesan cheese
- - 2 tbsp olive oil
- - Salt and black pepper to taste
- - Zest of 1 lemon optional
Cook rigatoni in salted water until al dente. In last 2 mins, add broccoli. Drain and reserve ½ cup pasta water.
Heat olive oil in a large skillet. Cook sausage until browned, about 6–8 minutes.
Add garlic and red pepper flakes. Sauté for 1–2 minutes.
Return pasta and broccoli to the skillet. Toss to combine.
Stir in Parmesan and lemon zest. Add pasta water as needed to loosen the sauce.
Season with salt and pepper. Serve hot.
