Preparation Steps

  • Preheat your oven to 325°F (163°C). This ensures an evenly cooked brisket that will be both tender and flavorful.
  • Trim any excess fat from the corned beef. Rinse it under cold water to reduce the saltiness, preparing it for the spice rub.
  • Pat the brisket dry using paper towels, then place it fat side up in a roasting pan fitted with a roasting rack.
  • Crush the coriander seeds, allspice berries, and whole cloves lightly in a medium bowl. Mix them with the light brown sugar and freshly ground black pepper, then rub this spice mixture evenly all over the brisket.
  • Add 6 cups of water to the roasting pan. Cover tightly with aluminum foil.
  • Roast the brisket for 2 hours covered, then carefully remove the foil. Continue to roast for an additional hour until the brisket is fork-tender.
  • Let the brisket rest for 15 minutes after roasting.
