  • 1 pound Ground Beef Use an 80/20 or 90/10 blend for optimal moisture and flavor.
  • 1 cup Panko Breadcrumbs Regular breadcrumbs can substitute.
  • 1 large Egg Make sure it’s at room temperature for better mixing.
  • ½ cup Ketchup Barbecue sauce is a tasty alternative.
  • 1 tablespoon Worcestershire Sauce Optional for vegetarian options.
  • 1 teaspoon Onion Powder Fresh onion finely chopped is a fine substitute.
  • 1 teaspoon Garlic Powder Minced garlic can be used for a fresher taste.

For the Topping

  • ¼ cup Additional Ketchup Spread on top before broiling to create a glaze.

How to Make Homemade Instant Pot Meatloaf

  • In a large bowl, gently mix together the ground beef, panko breadcrumbs, egg, onion powder, garlic powder, seasoned salt, Worcestershire sauce, and ½ cup ketchup. Be careful not to overmix!
  • Divide the meat mixture into two loaf pans, firmly packing it to hold its shape.
  • Pour 1.5 cups of water into the Instant Pot and place the trivet inside.
  • Set the loaf pans on the trivet within the Instant Pot and close the lid, ensuring the vent is sealed.
  • Set the Instant Pot to cook on high pressure for 25 minutes.
  • Perform a quick release once the cooking time is up and carefully open the pot to remove the loaf pans.
  • Spread the remaining ketchup generously over the tops of the meatloaf and broil for about 5 minutes until caramelized.
  • Let the meatloaf rest for 5 minutes before slicing. Enjoy with your favorite sides!

Notes

Optional: Garnish with fresh parsley for a pop of color and flavor. Store leftovers in an airtight container for up to 4 days.
