Preparation

  • Melt butter in a large pot over medium heat. Add shallots and garlic, cooking until softened and fragrant (about 5 minutes).
  • Pour in chicken stock and dry white wine. Toss in the live mussels, cover the pot, and steam until the shells open (6 to 10 minutes). Discard any unopened mussels.
  • Remove the pot from heat, stir in heavy cream and fresh parsley. Taste and sprinkle in salt and black pepper as needed.
