Ingredients
  

  • - 1½ lbs chicken breasts or thighs
  • - 2 tbsp olive oil
  • - ½ yellow onion diced
  • - 4 garlic cloves minced
  • - 1 tsp Italian seasoning
  • - ½ tsp red pepper flakes
  • - ½ tsp salt
  • - ¼ tsp pepper
  • - ½ cup sun-dried tomatoes chopped
  • - 4 cups chicken broth
  • - 1 cup heavy cream
  • - 16 oz gnocchi
  • - 2 cups chopped kale or spinach
  • - ¾ cup grated parmesan
  • - Fresh basil for garnish optional

Instructions
 

  • Sear seasoned chicken in olive oil. Set aside.
  • Sauté onion, garlic, and spices.
  • Add sun-dried tomatoes and broth. Simmer chicken 15–20 min.
  • Shred chicken and return to pot.
  • Stir in gnocchi and cream. Simmer 5 min.
  • Add kale and parmesan. Stir until wilted and creamy.
  • Serve hot, garnished as desired.

Notes

- Use rotisserie chicken to save time
- Coconut cream + DF parmesan = dairy-free
- Freeze before adding gnocchi for best texture
