How to Make Fresh Peach Jam

  • Prepare the Canner: Fill a canner half-full of water and bring to a gentle simmer over medium-high heat.
  • Wash the Jars: Clean mason canning jars, lids, and bands in hot, soapy water.
  • Blanch the Peaches: Blanch peaches in boiling water for 45 seconds. Immediately transfer to ice-cold water for 1 minute.
  • Chop the Peaches: Remove the skin and pits from the cooled peaches and finely chop them until you have 4 cups.
  • Cook the Peaches: In a saucepan, heat the chopped peaches over medium-high heat for 5 minutes. Add lemon juice and honey.
  • Boil the Mixture: Bring to a full rolling boil, stirring constantly. Stir in the pectin pouch and boil for 1 minute.
  • Skim the Foam: Remove from heat and gently skim off any foam on top with a metal spoon.
  • Ladle into Jars: Ladle the hot mixture into prepared jars, leaving about ⅛-inch from the top.
  • Process the Jars: Place jars on a canning rack in the canner, cover with water, and boil for 10 minutes.
  • Cool the Jars: Using a jar lifter, remove the jars and allow them to cool completely.
